The Changes of Antioxidant Activity of Three Varieties of ‘Nalewka’, a Traditional Polish Fruit Alcoholic Beverage during Long-Term Storage

The diet rich in fruits is widely recommended for health-promoting properties. Regular consumption of could reduce the risk many diseases. fruit-based alcoholic beverages have been produced centuries and, countries, are still very popular. ‘Nalewka’ a traditional name Polish liqueur, i.e., an beverage made by maceration fruits. Homemade nalewkas often stored long time before consumption, which can affect content valuable secondary metabolites. aim study was to compare effect long-time storage on antioxidant activity and total polyphenol, anthocyanin, tannin as well gallic acid three homemade nalewkas. Cherry, plum, multifruit nalewka were 1997 between 2013–2019 years. measured DPPH, ABTS, FRAP, CUPRAC methods. estimated high-performance liquid chromatography (HPLC). oldest (from 1997) showed significantly lower polyphenols, anthocyanins, compared later-produced nalewkas, particular those 2016–2019. In most cases, correlation also found parameters polyphenols anthocyanins. Long-term reduces metabolites responsible thus, health properties beverage.
